“Cream of” Soup Substitute

Chicken, mushroom, onion - whatever kind of “cream of” soup you need, this is the recipe for you. With simple ingredients and just a few minutes, you can make your own at home. It’s easy and a healthy alternative to the canned variety. Plus, it can be customized to whatever type of “cream of” soup you need. Next time a recipe calls for a can in of it in a casserole, try this substitute instead!

Cream of Anything Soup

Prep Time: 2 minutes

Cook Time: 10 minutes

Ingredients

  • 2 tablespoons butter

  • 2 tablespoons flour

  • 1/2 cup broth

  • 1/2 cup milk

  • 1/4 teaspoon salt

Instructions

  1. Heat butter in small sauce pan over medium heat.

  2. Once the butter is melted, add flour and whisk. cook for 2 minutes.

  3. Slowly whisk in broth and milk. add salt and seasonings of choice.

  4. Stir occasionally until mixture comes to a boil.

  5. Boil for one minute, then remove from heat.

  6. Add to any recipe calling for a can of "cream of whatever soup."

Recipe Variations:

  • 1/4 cup diced and cooked mushrooms

  • 1/2 teaspoon onion powder + 1/4 c diced and cooked onion

  • 1/4 cup cooked and diced chicken

  • 1/2 teaspoon garlic powder

  • 1 teaspoon dried herb of choice
