Meatballs
Consider these meatballs a jumpstart to your dinner plans. A quick mix, shape, and then into the oven is all it takes. Once they are done baking, you can take them in so many different directions. Add them to spaghetti sauce for Italian night, use them to make Swedish meatballs, etc. However you plan to dress them up, they are sure to be delicious!
Easy Baked Meatballs
Prep Time: 10 minutes
Cook Time: 20 minutes
Yield: 8 servings
Ingredients
2 lbs ground beef
1/3 cup breadcrumbs
1/3 cup parmesan cheese, finely grated
2 eggs
1 tsp each: salt, garlic powder
1 tablespoon dried parsley
Instructions
Preheat oven to 375 degrees. Pull out a large sheet pan and set aside.
Combine all ingredients in a large bowl using your hands. Shape into balls roughly 1 inch in diameter.
Place meatballs on sheet pan as close together as possible without touching (it may be a tight squeeze!).
Bake for 20 minutes or until a meat thermometer reads 160 degrees.
Recipe Notes:
This makes a lot of meatballs! Cutting the recipe in half is an option, but freezing leftover meatballs is an even better idea.
If you don’t have Parmesan cheese, you can substitute with more breadcrumbs. The meatballs may not be quite as tender, but with some sauce, no one will notice;) Also, do not try to use a different type of cheese. Other kinds don’t hold up as well as Parmesan.
These meatballs pair well with sauces. Try adding BBQ, teriyaki, gravy, or marinara after they have baked. Then add them to a bed of pasta or rice for an easy main.
