Italian Meat Pie
Mention Italian and most people think pasta. Today I’m sharing a recipe that delivers that greatly loved Italian flavor, but without the noodles. This meat pie offers a fun twist to the typical spaghetti or lasagna night and is so easy to put together. Hearty and healthy, it makes a great meal all on its own, while skipping the carb-heavy pasta. Using simple ingredients, you can make this easy, from-scratch meal that the whole family will enjoy!

Yield: 8 slices
Ingredients
1 lb ground beef
1 onion, diced
1 bell pepper, diced
2 teaspoons each: basil, oregano
1 teaspoon each: garlic powder, salt
1/2 teaspoon black pepper
4 garlic cloves, minced
2 tablespoons tomato paste
1/2 cup parmesan, shredded
5 slices provolone cheese
1 cup mozzarella cheese
Batter:
3 eggs
3/4 cup plain yogurt (can substitute for 1/2 cup sourdough starter, see note)
1/2 teaspoon each : salt, baking soda, baking powder
1/2 cup flour
Instructions
Preheat oven to 350 degrees
Heat a large skillet to medium heat. Add beef, onion, and pepper. Cook until the meat is thoroughly browned.
Add garlic and cook 30 seconds. Drain grease if necessary.
Turn off heat and stir in seasonings and tomato paste.
In a large bowl, combine batter ingredients.
Butter a 10 inch cast iron skillet. Pour half of batter onto bottom of the skillet and spread evenly.
Distribute half of the meat mixture over the batter.
Sprinkle parmesan, then arrange provolone slices around the pan with one slice in the middle.
Spread remaining meat mixture over the cheese.
Stir mozzarella into the remaining batter and spread over the meat mixture to create an even layer on top.
Bake 30 minutes.
Recipe Notes:
You have the option to use 1/2 cup sourdough starter (active or discard) to replace the 3/4 cup yogurt. It’s a great way to use up discard! And if you are needing to use sourdough for easier digestion, soak the starter and flour together for several hours first.
Think about the traditional Italian dishes and their high carb pastas. With its simple batter, this meat pie makes a great low-carb option. You’ll skip the empty calories found in pasta and instead feel full and gain nutrients from the pie’s meat and cheese filling, all while getting that delicious Italian flavor.
