Pancakes
Making pancakes is probably the most popular way to use up sourdough discard. There are plenty of recipes out there…but this one is a little different than any other I have tried. Sometimes it’s the small changes that make all the difference. By adding a little extra flour to the starter/discard, you get fluffy - not flat- pancakes. These slightly sweet pancakes have a hint of vanilla and are just waiting to be buttered and drenched in maple syrup. Go ahead- try these for your next weekend breakfast!
Sourdough Pancakes
Prep Time: 5 minutes
Cook Time: a few minutes per pancake
Yield: 14 large pancakes
Ingredients
3 cups sourdough starter (discard is fine)
1/2 cup flour
2 eggs
5 tablespoons coconut oil or butter, melted
1/4 cup sugar
1 teaspoon vanilla
1 1/2 teaspoons baking soda
Instructions
The night before you plan to make the pancakes, combine the flour and starter in a large bowl. This thickens the batter just enough to make pancakes that hold their shape after they have been cooked.
The next morning, heat skillets or a griddle on medium heat. Add remaining ingredients to bowl and whisk well. Tip: The baking soda will react with the sourdough and cause it to puff in the bowl. Make sure not to add it until you are ready to cook the pancakes so you can take advantage of the fluff!
Pour 1/3 cup of batter onto buttered cooking surface. Once the bottom and edges have started to brown, flip and cook another minute or so.
Repeat with remaining batter, applying more butter to the griddle or skillet as needed.
Recipe Notes:
Of course you can add mix-ins to these pancakes! Our kids think a pancake without chocolate chips is not worth eating. Other options are blueberries, pecans, peanut butter chips - whatever your heart desires! I just suggest sprinkling it into the pancake after you dropped batter into the skillet. By doing it this way you avoid all the mix-ins going the bottom of your bowl. Plus, you don’t burn your chocolate chips when they hit the hot skillet…not that this has ever happened to me before;)
