Sourdough Cinnamon Rolls

I am typically a self-disciplined person. I am also a very health-conscious person.

But when it comes to these cinnamon rolls, I lose all will power. There’s just something about the soft dough, buttery brown sugar filling, and coffee icing that gets me every time (and trust me, I have made these multiple times). However, since these are sourdough, they are “good for you”, right? Well, either way I am making them, eating them and enjoying them. You should too. Because any time is a good time for a cinnamon roll.

Sourdough Cinnamon Rolls

Prep Time: 25 minutes

Cook Time: 20 minutes

Yield: 18 cinnamon rolls

Ingredients

  • 1 1/2 cups milk

  • 1/2 cup butter, melted and cooled

  • 1/3 cup sugar

  • 5 cups flour

  • 1/2 cup sourdough starter

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 1/2 cup butter, melted

  • 1 1/4 cup brown sugar

  • cinnamon

    • Icing:

    • 3 tablespoons melted butter

    • 6 tablespoons coffee

    • pinch of salt

    • 3 cups powdered sugar

Instructions

  1. Mix together milk, butter, sugar, flour, and starter. Knead several minutes, until the dough is smooth and stretchy. Alternatively, you can do several rounds of stretch and folds.

  2. Cover with damp towel and allow to rise until doubled, 8-12 hours.

  3. After the dough has risen, butter a 9 x13 pan and an 8 x 8 pan.

  4. Punch down dough and add baking powder, soda, and salt. Mix to incorporate.

  5. Roll out dough into a thin rectangle (around 15 x 24 inches or thereabouts).

  6. Pour melted butter over the dough and spread.

  7. Sprinkle brown sugar evenly over the dough, then cinnamon according to preference.

  8. Roll tightly.

  9. Cut into individual rolls 1 inch in thickness.

  10. Place 12 rolls in the prepared 9x13. Put remaining rolls in the 8x8 pan.

  11. Preheat oven to 375 degrees. Allow to rise for 20 minutes.

  12. Bake 20-25 minutes, or until rolls are starting to brown on top.

  13. Mix together icing and spread on top after cinnamon rolls are done baking.

Recipe Notes:

The nice thing about these cinnamon rolls is if they haven’t fully risen by the time you need to bake them, the baking soda and powder will still help them rise in the oven. So, if you need to move the process along, you can do that with this sourdough recipe.

Not a fan of coffee? You have permission to substitute milk for the coffee in the icing.

This makes a lot of cinnamon rolls! Freeze extras for another time, if you like.
