Hassle Free Mashed Potatoes:
Instant Pot Recipe
Mashed potatoes take my mind to the holidays. As we all know, the holidays mean the stovetop and oven are bustling with activity. Avoid the crowded stovetop (and walking across the kitchen with a hot, heavy pot) by cooking your mashed potatoes in the Instant Pot. And of course, you can use this recipe any time of year...and still avoid the hassle of boiling water.
Prep Time: 5 minutes
Cook Time: 6 minutes
Yield: 6 servings
Ingredients
Peel and chop potatoes into large pieces. Place inside Instant Pot with 1/2 cup of water.
Place lid on Instant Pot, ensuring the valve is set to the sealing position. Select MANUAL and adjust the time to 6 minutes.
After the cooking time is complete, adjust the valve for a quick release.
Carefully drain water from the Instant Pot.
Add butter, cream, and milk. Use a hand mixer to mash the potatoes while also combining the rest of the ingredients. Alternatively, you can use a potato masher.
3 pounds Russet potatoes
1/4 cup (1/2 stick butter)
1/2 cup heavy cream
1/4 cup milk

Recipe Notes:
You may notice I do not have any salt listed in the ingredient list. I have found it often gets lost in the mix, so we end up still adding salt at the table or we are adding gravy to the potatoes anyways, which adds its own saltiness. Either way, it seems better to wait until the potatoes are on the plate to determine if salt needs to be added.
There is great flexibility in the amount of butter, cream, and milk used in this recipe. Adjust the ratios to your preference. The main point of this recipe is to introduce you to the ease of the Instant Pot!
