Casserole

Quick, easy, and kid friendly - that’s what this casserole is. All you need is a few minutes to brown the meat, layer the casserole, and then pop it into the oven for a quick bake. Nothing fancy, but it’s one of those recipes to have in your back pocket when you need to feed hungry people fast. Plus, it’s a great way to use up stale tortilla chips!

Yield: 6 servings

Taco Casserole

Ingredients

  • 1 lb ground beef

  • 1 onion, diced

  • 1 can black beans, drained

  • 1/2 cup salsa

  • 1/4 sour cream or plain yogurt

  • 2 cups shredded Colby Jack cheese, divided

  • 3 cups crushed tortilla chips, divided

Instructions

  1. Preheat oven to 350 degrees.

  2. Heat a skillet to medium heat. Add ground beef and onion, browning until cooked thoroughly. Option to add in some taco seasoning to taste.

  3. Turn off heat and add beans, salsa, sour cream, and 1 cup of cheese.

  4. Grease a 9x13 pan. Add 1 1/2 cups of crushed chips to bottom of pan. Spoon meat mixture over chips.

  5. Stir together remaining crushed chips and one cup of shredded cheese. Spoon on top of the meat mixture.

  6. Bake for 10 minutes.

Recipe Notes:

You could totally add more to this casserole. Sauteed bell pepper, olives, some chiles or jalapenos would all be great additions. Plus, you can switch out the cheese for whatever you have- make it your own!

I bet this would be really good with Doritos too if you happen to have some on hand.

Toppings are always a good idea. Sour cream, a dash of hot sauce, slices of avocado… to name a few.
