Peppermint Mocha Cookies
Your favorite winter drink in cookie form. These cookies are sweet, minty, and chocolatey- all the things you would expect from a dessert based on your holiday coffee. But instead of ordering a cup to-go, you have to fight the battle of only eating one cookie…or two…or three.
Read on for the recipe that perfectly pairs cocoa, peppermint, and coffee to embody a mint mocha in a soft, chewy bite.

Yield: around 2 dozen cookies
Ingredients
1/2 cup brown sugar, packed
1/2 cup white sugar
1 stick of butter, room temperature
1 egg
2 teaspoons instant coffee
1/4 teaspoon salt
1/3 cup cocoa powder
1/2 teaspoon baking soda
1 cup flour
1/4 cup crushed peppermint candy (the hard kind)
1/2 cup chocolate chips
Instructions
Preheat oven to 350 degrees.
In the bowl of a stand mixer with a paddle attachment, cream the sugars and butter.
Add egg on low speed.
Add instant coffee, salt, cocoa powder, and half a cup of flour on low speed.
Add the other half cup of flour and bring it to medium speed to incorporate it fully into the dough.
Add chocolate chips and peppermint candy on low speed.
Using a cookie scoop, drop 12 dough pieces evenly spaced onto a cookie sheet.
Bake 10 minutes. Allow to cool 4 minutes before removing from cookie sheet.
Recipe Notes:
Peppermint, coffee, and chocolate are all strong flavors, so I didn’t want to add too much of any of them in this recipe. That being said, feel free to add more of any (or all of them) to suit your preference. I personally would add another teaspoon of coffee if they were just for me:)
I used candy canes for the peppermint and it worked great! 4 candy canes crushed = 1/4 cup
